I LOVE sweet and tangy salad dressings. We had a cup of unsweetened apple juice left from another recipe, and (you know me!) I didn't want to waste it! So, I came up with this easy, DELICIOUS, oil-free and sugar-free dressing that is sweet, creamy, and ever-so-slightly tangy. Perfect dressing to get kids hooked on salad, too.
1 cup of unsweetened organic apple juice
1 Medjool date
1 T. apple cider vinegar (add more if you like it more tangy)
1 t. dijon mustard
1 t. chia seeds
1 T. tahini
Blend all ingredients in a high-speed blender until smooth and creamy. Refrigerate and serve chilled on salad.
