Smoky Roasted Vegetables Cheese Sauce [dairy-free, gluten-free, vegan]

1 very small onion, chopped
1 carrot (washed and unpeeled), chopped
1 cup Butternut squash, peeled and diced (or use a cup of frozen)
a large Yukon Gold potato, peeled and chopped
1/4 red bell pepper, chopped into 4 pieces
1/2 cup orange grape tomatoes (which needed to be used up!)
3 cloves of garlic (leave in husk)

Pre-heat oven to 400 degrees F.

Place the above vegetables on a parchment paper-lined baking tray with sides.
Roast for about 25 minutes (check at 20 minutes to see if the potatoes, carrots, and squash are fork tender).

Then, add the roasted veggies to the Vitamix with:

1/4 cup nutritional yeast flakes
1 t salt
1 t liquid smoke
1/4 t chipotle pepper
1/8 t cumin
1 1/2 cups water (more if needed)

Blend until smooth and creamy!

Herbed Mushroom Gravy [oil-free, dairy-free, gluten-free, vegan]

24 oz. Baby Bella mushrooms, sliced
1 small onion, diced finely
3 cloves of garlic, minced
1 t dried rosemary (short-cut)
1 pinch of thyme (I'm not a huge fan of thyme!)
3/4-1 t salt
black pepper to taste
2 dashes of Liquid Smoke
1 t Kitchen Bouquet (optional)
1 T cornstarch + 1 T cold water

Cook the onion in a non-stick skillet with a little water over med-high heat until translucent and tender. Add the mushrooms, garlic, liquid smoke, rosemary, and thyme and COVER. Cook for about 5-6 minutes until the mushrooms are cooked down and tender. There should be quite a bit of liquid, which is good. Don't try to cook off the excess. Add the salt, pepper, and kitchen bought and stir well. Mix up the cornstarch and cold water and stir in to thicken. Add ore salt and pepper to taste.

Homemade Sweet and Sour Sauce [No Sugar Added]

This sweet and sour sauce is ideal to dip baked egg rolls into!

Makes about 1 cup of sauce.
2 T rice wine vinegar
1 T Mirin or Japanese rice wine
juice from a 15-oz can of unsweetened pineapple, reserve the fruit
1/4 cup date syrup (optional: use brown sugar)
2 t low-sodium soy sauce
2 T finely chopped red bell pepper
2 T finely chopped pineapple (from the can you drained)
a pinch of red chili flakes (or more if desired)
1 T of non-GMO cornstarch or arrowroot powder

In a small saucepan, bring the vinegar, rice wine, pineapple juice, date syrup, soy sauce, chopped red bell pepper, and chopped pineapple to a low rolling boil. Cook until the peppers are tender. Add in the chili flakes. Then, in a very small bowl, mix the cornstarch with 1 T. of cold water and stir to create a thickening slurry. Add to the sauce mixture to thicken. Taste for sweetness. Add more date syrup if it's not sweet enough for you.

Oil-Free Teriyaki Marinade/Sauce

Oil-Free Teriyaki MARINADE for Baked Tofu:

1/2 cup water
3 T. low-sodium soy sauce
½ t. grated fresh ginger
1 clove garlic, minced
2 T. date syrup or raw sugar

Combine all ingredients and marinade drained, pressed tofu cubes in it for at least 30 minutes. Then, bake the marinated tofu on a  baking sheet covered with Reynolds Non-Stick Foil at 375 degrees for 20-25 minutes, depending on the size of your tofu cubes. You want them to be a little crispy on the outside and not jiggly on the inside--but you don't want to totally try them out. 20-25 minutes is usually plenty of time to accomplish this.

Oil-Free Teriyaki SAUCE:
(Double recipe if making more than 2 servings)

1/2 cup water
3 T. low-sodium soy sauce
½ t. grated fresh ginger
1 clove garlic, minced
2 T. date syrup or raw sugar
1 T. non-GMO cornstarch or arrowroot powder

NOTE: If using in a stir-fry, don't cook the sauce first. Just add it at the end to your stir-fried veggies and thicken in your skillet/wok.

Whisk all ingredients together in a small saucepan. Bring to a low boil just to thicken. Can store in the refrigerator for future use.
