Roasted Herb Zucchini

3 zucchini, cut into bite-sized chunks
10-12 grape or cherry tomatoes, cut in half
2 garlic cloves, minced
1 shallot, minced
1 t. dried basil
1 t. dried oregano
1/4-1/2 t. salt
black pepper to taste

Preheat oven or toaster oven to 400 degrees F.
Mix all ingredients in a bowl, making sure all pieces are coated with spices.
Pour mixture onto a rimmed baking sheet covered with Reynolds non-stick foil.
Roast for 15-20 minutes until tender but not mushy.
