1 medium onion, sliced finely
1 previously COOKED head of broccoli florets
1 large or 2 small russet potatoes, diced
4 cups of vegetable broth
1 cup unsweetened cashew or soy milk
1/4 cup nutritional yeast flakes
1 t. salt
1/4 t. black pepper
In a large soup pot, steamfry onions until golden.
Add potatoes and broth. Bring to a boil. Cover and simmer for 20 minutes (or until potatoes are tender).
Turn stove off.
Add previously cooked broccoli, non-dairy milk, nutritional yeast flakes, salt, and black pepper.
Then, blend the soup in a high-speed blender (BlendTec or Vitamix) until very smooth. Warm to serve!
