Roasting Potatoes...WITHOUT OIL!

We love to have roasted potatoes along with a lunch or dinner or as a snack. Traditionally, people put oil on potatoes to help seasonings stick and to roast them "properly." Yet ANOTHER misnomer! You DO NOT need OIL to roast potatoes! In the photos below, I have combined several of my favorite herbs and spices (dried rosemary, dried thyme, Himalayan pink salt, black pepper, onion powder, garlic powder, and paprika) and simply tossed the freshly cut potato chunks (picture 2) into the seasoning mix (picture 1). As you can see, all of the seasoning is evenly coated on the potatoes and no longer on the bottom of the bowl (in picture 3). Lay the seasoned potatoes on a parchment paper-lined baking sheet and bake at 400-425 degrees in an oven or toaster oven until tender inside and golden and crispy on the outside. NO OIL NEEDED! You CAN lose weight eating potatoes like this!!

    1. Depending on the size of your cubes, usually about 15-20 minutes.
