Marinated Beans For Salad

I love to make salads when I am trying to bulk up my raw food intake. It's just really easy to get in a lot of them at once and feel super full afterwards. But, I also make it a habit to eat beans (legumes) at most of my meals because they contain resistant starchSO EAT MORE BEANS!!!

On to my little trick! I love to marinate all kinds of beans to later add to my salads. If I'm making an Asian salad, I will add oil-free Asian dressing to my chickpeas. If I'm making a Mexican salad, I will marinate black beans in salsa first. It is amazing how this small step kicks up a salad!

Try marinating your favorite beans and add them to your salad!

  1. we do this in my family - and there are actually no vegans in my family circle / vegetarian - and some who eat very little meat / but no vegans I have been attempting to adhere to the vegan life-style for the most part / however, I have been known to break away now and then / for me ... it's like religion .. I do the best I can / if I fall, I get up and start all over again :) can't help but be honest... Thanks for your posts/blog and I appreciate the time and effort you put forth.

  2. More details please! How much marinade to beans, marinade recipes? Do you do this with cane beans?

    1. Hi Andrea! I usually add marinade just to cover whatever beans I am marinating. I do use previously cooked or canned beans. That way, they are soft and can absorb the marinade. In terms of what kind of marinade, I use a variety. I like Trader Joe's Oil-Free Sesame Soy Ginger Vinaigrette for an Asian marinade. I use my Salsa Fresca (find under the Dips-Salsas section of this website) for Mexican marinading, and have tried various other marinades I threw together on-the-fly! Be creative!
