Try Something New!

Since going plant-based, I have opened my eyes (and stomach!) to many foods I had not previously eaten or prepared. I have also met many people who have introduced me to other cuisines. One such lovely lady is Katie L. in Louisiana! She has shared a lot of cajun goodness with me, for which I am so grateful! Recently, she posted a photo of some butter beans (which are actually just large-sized lima beans) that she cooked to perfection in her pressure cooker. I just had to make them! These beans are creamy and comforting...JUST FABULOUS!

Here's how I made them...

1 bag of dried large lima beans (butter beans), rinsed and drained
1 onion, chopped
4 small cloves of garlic, minced
5 cups of water
1/8 t. of black pepper (or more if you like)
1-2 t. salt (to taste!)

I placed all ingredients in my pressure cooker for 45 minutes on natural release. They came out perfect! We plan to eat them with roasted potatoes and steamed greens for dinner this week!

We recently got a new stainless steel pressure cooker to replace our aluminum one we've had for about 30 years and hardly used (but now want to use it more for recipes and especially doing beans). Because we are transitioning to a plant based diet bean cooking in on my radar! I did chick peas the other day in the pressure cooker. On the stove top it would take sometimes 2 hours or even 2 and 1/2 to get them to the softness I like, but I did them in the pressure cooker and cooked them under pressure for 35 minutes and then let the pressure release naturally for about 20 minutes. They were cooked but I would have liked just a bit softer so will try 45 minutes next time. I was actually looking around the internet for how long to do lima beans. I like certain beans over other beans and seem to be more of a white bean fan it seems, and I do like lima beans. So it's good timing that I've seen your recipe. I'll try it.

  2. PS Here in Australia we make a distinction between butter beans and lima beans. We only get the large lima beans and not the mini ones. The large butter beans only come in cans.
