8 slices of whole-grain bread
1 cup unsweetened cashew milk
1 T walnuts
1 T ground flaxseeds
1/2 t cinnamon
1/8-1/4 t nutmeg
Mix cashew milk, walnuts, ground flaxseeds, cinnamon, and nutmeg in a cup blender until smooth. Pour into a pie plate and let sit for 5 minutes. Dip bread into mixture and cook on nonstick skillet over medium heat until lightly browned and cooked through. Flip several times until the bread dries out some. Serve with real maple syrup or fresh fruit, like sliced bananas or fresh or frozen berries. Sprinkle with more nutmeg or a bit of coconut sugar.
