1/2 cup natural peanut butter (no sugar, oil, or salt added)
1/3 cup lite coconut milk (from can)
3 tablespoons soy sauce
1-2 tablespoons Sriracha sauce
2 tablespoons lime juice
1 clove garlic, grated finely
2 tablespoons Turbinado sugar or date syrup
100% Whole Wheat Linguine (Whole Foods 365 brand is the best and it’s cheap!)
8 oz. sliced mushrooms
1-2 cups zucchini, diced
1 cup red or orange bell peppers, diced
Mix all ingredients (except linguine) together in a small mixing bowl. Set aside.
Cook linguine according to package directions.
Steam-fry the mushrooms on medium high heat in a very large skillet to remove excess water. This takes about 10 minutes. Add zucchini, then two minutes later, add peppers. Cook until crisp-tender.
Add drained noodles. Toss with peanut sauce and serve.
