Quinoa Farro Power Salad
1 cup dry quinoa, rinsed well and cooked according to package directions then chilled
1 cup of Trader Joe's 10-minute Farro, cooked according to package directions then chilled
1 1/2 cups frozen edamame, boiled in water for 5 minutes then cooled
1/2 cup chopped organic cilantro
1 mango, diced very small
1 organic red bell pepper, diced very small
1 cup organic cucumber, peeled and diced very small
1/4 red onion, chopped very small
1/2 cup dried cranberries
1/4 cup toasted almonds, chopped small
Juice of 2-3 limes
1/4 cup 4% acidity balsamic vinegar or a combination of 1/4 cup regular balsamic vinegar and 1 T. of maple syrup
1/4 t. salt (optional)
Dried shaved coconut as a garnish (optional)
Combine all ingredients for a nutrient-packed lunch!
