Pumpkin Oat Pancakes


NOTE: This recipe was adjusted on 6-13-15.
1 cup oat flour (or you can use whole wheat pastry flour and/or half of each)
½ tsp pumpkin pie spice
½ T baking powder
1 T. raw sugar
1 cup non-dairy milk
4 T canned organic pure pumpkin

In a medium bowl, whisk together DRY ingredients.
Add in non-dairy milk and pumpkin, and stir together well.
Let the mixture rest for 10 minutes while you warm your nonstick griddle.
Cook on griddle until bubbles appear, flip, and serve!
