Marbled Banana Bread
1 cup mashed bananas, very ripe (about 3 medium-sized bananas)
¾ cup turbinado sugar
2 T. unsweetened applesauce
1/3 cup non-dairy milk
1 t. vanilla extract
1 ½ cups spelt or whole wheat pastry flour
¾ t. baking soda
¾ t. salt
3 T. cocoa powder
6 T. boiling water (3 T. for chocolate batter and 3T. for base batter)
Preheat oven to 350 degree and grease a loaf pan.
Whisk together mashed bananas, sugar, applesauce, non-dairy milk, and vanilla until smooth in a medium bowl.
Whisk together flour, baking soda, and salt in a large bowl.
Add wet ingredients to the dry ingredients and stir just until well combined. Do not overstir at this point.
In a small bowl, add cocoa powder and 3 T boiling water. Stir with a small spoon until smooth.
Add one cup of the base batter into the cocoa and water mixture. Stir together well.
With a hand beater, beat the base batter for about 1-2 minutes, until smooth.
Drop ½ cupfuls of batter, alternating the base and chocolate batters, into the loaf pan until you have put all of the batter into the pan. Then, use a butter knife to swirl through the batter in a figure-eight motion until a nice marbling is achieved.
Bake 55 minutes or until a butter knife put into the center comes out clean.
