Coconut Lovelies

Making a treat that you can really enjoy can be challenging when you've come from a Standard American Diet (SAD) and are used to processed flour and sugar. These Coconut Lovelies (as I am calling them) are made from whole ingredients and are just the right sweetness. They're not to be eaten daily because coconut is high in fat, but for an occasional treat, they hit the spot.


1/2 cup of Medjool dates, pitted
1/2 cup of warm water
1 ripe banana
2 cups of unsweetened dried coconut flakes (or shredded is fine, too)
3/4 cup oat flour
1/4 cup old-fashioned oats

Preheat oven to 350 degrees.
In a blender or food processor, blend the dates, water and banana until smooth. Add the coconut and oat flour and blend.
Pour mixture into a small bowl and stir in the oats.
Use a cookie scooper or a spoon to place 1 T. of cookie batter onto a nonstick baking sheet or a parchment-covered baking sheet.
Bake for 15-18 minutes until golden brown. Let cool before serving.
