Bubbles and Mash (Mashed Potato and Veggie Patties)

8-10 Yukon gold potatoes
1 t garlic powder
1 t. onion powder
½ t salt
3 T nutritional yeast flakes
¼ cup frozen corn
¼ cup frozen peas
½ roasted red pepper, chopped (optional)
1 handful chopped spinach
Ketchup

Boil potatoes until tender. Cool and remove skin.
Preheat oven to 400 degrees.
In a large bowl, mash together first 5 ingredients. Mix mash with corn, peas, roasted red pepper (optional), and spinach.
Form into ¾-inch thick patties and place on parchment-paper covered cookie sheet.
Bake for 30-40 minutes until lightly browned on the outside.
Serve with ketchup.
